I think the reason molded desserts have seen a decline is because they can be tricky. I still haven't gotten the hang of anything more advanced than a single-flavor gelatin mold. Suspending fruit/layering flavors takes a steady hand a watchful eye. I have my mother's Joys of Jello cookbooks (the original, and the New Joys of Jello).
